The answer to your question is obviously: it depends. Are you satisfied with EDGE speed/coverage? Do you know the strength of 3G coverage in your area?
My thoughts on your dilemma is that “the long run” possible extra costs are mythical. You are likely to replace whatever you purchase now within 2-3 years or less so that the added cost, if any, is probably worth the extras in having the newer product.

I can’t really speak to the iPhone dilemma, but you also asked about recording quality. On the version of the podcast I downloaded, all your recorded material had a noticeable echo. The “live” material didn’t have that trouble.
It seems as if you had this problem the last time you had to set everything up again from scratch. Shouldn’t be hard to fix. I hope you can, because I greatly enjoy the show!
